Easy Lunch Recipes for Families on the Go

Preparing lunch for the whole family is not very easy,especially if you want to please every one’s palate.

Add to the that the hectic accidents that happen in the morning as everyone gets ready for school and work, and you know that the only way to start the day right is to make sure that you stick to Easy Recipes that would provide everyone a satisfying but healthy lunch. Anything complex will probably mean late kids or asking them to just eat cafeteria food.

Here are some ideas for you, so that you can prepare your family?s lunch in as little time as possible without sacrificing taste and nutrition.

Anything You Want Tortilla Wrap

Ingredients:

1 whole wheat flour tortilla

4 slices pre-grilled or seared turkey breasts (You can substitute anything you want, from skinless chicken breast to ham and roast beef slices.)

1 slice mozzarella cheese

4 thin slices cucumber

4 slices avocado

Directions:

Layer ingredients on the tortilla. Roll it up and slice the tortilla in half. Wrap each piece with cling wrap to ensure nothing spills. You can just double the amount of ingredients to make more. You can also add any veggies like tomatoes, olives, lettuce, and more. Tortilla wraps are perhaps one of the most flexible and easy recipes for lunches, so don?t be afraid to get creative each time you make them.

DYI Banana, PB and J Buns

Ingredients:

1 whole wheat hot dog bun

1 whole ripe banana

1 tbsp peanut butter

1 tbsp jam (any flavor your kids like)

1/2 cup assorted chopped nuts and raisins (place in sealed plastic container)

Directions:

Spread the peanut butter and jam inside the hot dog buns. Place inside your child’s lunchbox along with the unpeeled banana and container full of nuts and raisins. Let your child put together his own lunch at lunchtime simply by peeling the banana, placing it between the bun, and sprinkling with the nuts and raisins.

Easy Yummy Burgers

Ingredients:

1/2 pound lean ground beef

1/2 pound lean ground pork

1/2 small onion minced

1/4 cup bread crumbs

1/4 cup grated Parmesan cheese

1 egg

1 bunch parsley, chopped

salt and pepper to taste

4 hamburger buns

4 slices tomatoes

ketchup or mayonnaise

Directions:

Mix all ingredients (except for buns and tomatoes) in a bowl. Do not add water, the egg and breadcrumbs should make your patties stick together. Fry a small bit of the mix to see if you need to adjust taste. Add more salt, pepper, or cheese if needed. Shape mixture into patties. If the patties are falling apart, add more breadcrumbs. Fry patties, drain on paper towel and place on buns. Top with tomatoes. You can also top with lettuce, cucumber slices or fried eggs if you wish.

To make sure you don’t run out of time in the morning, prepare the patties before sleeping. Keep the patties in the chiller overnight. Make sure that you don?t freeze them! Fry them in the morning while you prepare the buns.


Easy Christmas Candy Recipes

Even if you are not a big candy eater, Christmas candy recipes are really welcomed during the holidays.

No matter how much we vow to eat healthy during the holidays, no matter how much we may swear off sweets, there is something quite wonderful about having at least a little bit of delicious Christmas candy now and then. It’s not all year after all.

I love making just a few of my favorite Christmas candy recipes at the beginning of the season. It is a busy time of year, so it is always best to use quick and easy candy recipes and make them when you have a few minutes.

Make things that are easily stored, so you can make them ahead of when they will be most needed. Of course not too far ahead or they’ll be sure to be gone by the big day.

These fantastic homemade Christmas candies will be such a hit at any event you host during the holidays. They are also a nice addition to a holiday dessert table with other Christmas desserts.

Almond Bark Candy

Almond bark is so easy to make! It has always been one of my favorite Christmas candy recipes.

You can vary the recipe to suit your taste. Don’t like raisins? Simply leave them out. If you like peanuts or pecans rather than almonds, use them instead. Try half the recipe made with white chocolate and half made with regular chocolate.

1 pound of white or regular chocolate
1/2 cups of raisins
1/2 cup of almonds, chopped

Melt chocolate until smooth. Add raisins and almonds. Pour onto wax paper – this will be a fairly thin candy. Let cool, then break into pieces.

Tip:
Try making the almond bark using 1/2 a pound of white chocolate and 1/2 a pound of dark chocolate and carefully stir them together with the end of a wooden spoon or some other utensil to marble your final product. Be careful though that you just mix it a bit or you will end up with tan colored almond bark.

Coconut Joys

Everyone seems to love coconut. This would be one of my mother’s favorite Christmas candy recipes.

1/2 cup of butter or margarine
2 cups of powdered sugar
3 cups of shredded coconut
2 squares (1 ounce each) of unsweetened chocolate

In the top of a double boiler melt the margarine. Remove it from the heat. Add the sugar and coconut and mix well. Shape rounded teaspoonfuls of the coconut mixture into balls. Make a depression in the center of each ball and place it on a platter or cookie sheet. Set them aside. Melt chocolate in the top of a clean double boiler. Fill the centers of the coconut balls with melted chocolate and chill until firm.

Tip:
You can also add color to the holidays by adding half of a candied cherry instead of the chocolate in the middle. Use half red cherries and half green for a really festive look

Rocky Road Fudge

Who doesn’t love rocky road fudge? There is something about the mix of smooth chocolate, peanuts and sweet soft marshmallows that brings a smile to most faces.

2 tablespoons of margarine
1 – 12 ounce package of semi-sweet chocolate chips
1 – 14 ounce can of Eagle Brand condensed milk
2 cups of dry roasted peanuts
1 – 10 1/2 ounce package of miniature marshmallows

In a saucepan, melt the chocolate morsels with the Eagle Brand milk and 2 tablespoons of margarine. Remove the mixture from the heat and add the peanuts and marshmallows. Stir it together thoroughly and spread it on to a waxed paper-lined 13×9 inch pan. Chill for 2 hours or until nice and firm before cutting the fudge into pieces.

We all have memories of our favorite Christmas cookie recipes.

Whether chocolate covered, fruit filled or icing topped, holiday baking recipes have to include a few fantastic cookie recipes to satisfy the sweet tooth in all of us.

I love easy cookie recipes. Most of us don’t have enough time to accomplish all we hope to, so quick and Easy Recipes, especially at this busy time of year, make it a bit easier on the cook. That’s always a good thing.

This is a selection of delicious but very easy Christmas cookie recipes that are a perfect fit for the festive season.

Any of these treats would be a wonderful contribution to a Christmas cookie exchange too, where a group of friends each makes a bulk amount of one or two cookie recipes, then trades, so all have a variety of cookies to serve throughout the holiday season.

Create holiday memories for your family with this batch of sweet and delicious easy Christmas cookie recipes.

Christmas Surprise Cookies

3/4 cup of shortening
3/4 cup of light brown sugar
1 egg
1 3/4 cups flour
1 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla extract
3/4 cup shredded coconut
2 teaspoons cream of tartar
Any flavor jam or jelly

Preheat the oven to 375ºF.

Cream the shortening and the sugar together. Add the egg and mix it all together well. Sift the dry ingredients together and add them to the wet mix. Add vanilla and mix. Drop the dough by teaspoons-full onto an ungreased cookie sheet. With your finger or a spoon, make an indentation in the center of the cookie ball and fill with jam or jelly. Sprinkle coconut over all and bake at for 10-12 minutes.

Fruited Shortbread Cookies

2 1/2 cups flour
1 teaspoons cream of tartar
1 1/2 cups confectioner’s sugar
1 – 9 ounce jar mincemeat
1 teaspoon vanilla
1 teaspoon baking soda
1 cup butter, softened
1 egg

Preheat oven to 375ºF.

Combine the flour, baking soda, and cream of tartar. In a large bowl, beat the butter and sugar together until fluffy. Add the egg. Stir in the vanilla and the mincemeat. Add the dry ingredients to the wet mix. Mix together well. (The batter will be stiff.) Roll into 1 1/4″ balls. Place on an ungreased cookie sheet and flatten slightly. Bake for 10-12 minutes or until lightly brown.

Tip:
You can ice these cookies with a glaze mixture if you would like. Mix confectioner’s sugar with a few drops of milk and vanilla until it reaches a runny but thick consistency. Drizzle over the Christmas cookies while they are still warm.

Almond Christmas Balls

1 cup of soft butter
1/4 cup of confectioner’s sugar
2 cups of sifted flour
1 cup of ground almonds
1 teaspoon of almond extract
Candied or maraschino cherries
Granulated sugar (for rolling cookies after baking)

Cream together the butter and sugar. Add the flour, ground almonds and almond extract and mix until it forms a dough. Roll a teaspoon of the dough into a ball, press down in the middle and place a cherry in the center. Cover the cherry completely with the dough. Bake the cookie balls on a greased cookie sheet for 30 minutes at 325ºF. Roll in granulated sugar before cooling.

Makes about 4 dozen cookies.

Each of these holiday recipes can be stored in an airtight container for at least a week.

Preparing Your Own Gourmet Desserts

There are gourmet desserts available in your supermarket, but preparing your own gourmet desserts is a special surprise for your family. Here is a recipe for a classic yellow cake:

4 eggs, whites and yolks separated
1 cups sugar
2 tsp. baking powder
2 cups flour
cup margarine
1 tsp. vanilla
cup sweet milk

Beat the egg whites until frothy; add of the sugar. Stir. Add the margarine. Put into refrigerator to chill. Make a separate mixture of the egg yolks and beat continuously while alternately adding the milk and flour. Fold the egg yolk and flour mixture into the egg white mixture. Pour the whole batter into two 9 round pans. Bake in a 350 degree for at least 25 minutes or until a tooth pick placed in the center of the cake comes out clean. To give this gourmet dessert a worthy topping, try maple icing, caramel frosting or a butter cream icing.

Another great gourmet desserts is a treat called Moms Cherry Delight. Cream cheese is the special ingredient in this gourmet desserts. The ingredients are:

1 Large Can of Cherry Pie Filling
1 Envelope Dream Whip Desserts Topping
1 Graham Cracker Pie Crust
1 Cup Sugar
3 oz Softened Cream Cheese

This is a very easy, yet elegant gourmet dessert. First, mix the cream cheese and sugar until is blended completely, set aside. Prepare the Dream Whip according to the instructions on the box. Fold the cream cheese mixture into the prepared Dream Whip. Now pour the mixture into the pie crust. Smooth the top, and then pour the pie filling over the cream cheese mixture. Chill for a short while in the freezer. Now enjoy this special, yet easy, gourmet dessert.
